Thanksgiving countdown: what to do each day
US Thanksgiving is Thursday 26 November 2026. This is a plain day-by-day list, from the week before to dinner, so nothing important is left to the last morning. The dates are for 2026; the same order works for any year, and for Christmas dinner on Friday 25 December if you count back from that day instead.
The turkey sets the first date
A frozen turkey thawed in the fridge needs about 24 hours for every 4 to 5 pounds (USDA Food Safety and Inspection Service). A thawed bird then keeps 1 to 2 days in the fridge, so the thaw start is the one date you cannot move.
| Turkey weight | Fridge thaw time | Move it to the fridge on |
|---|---|---|
| 8 to 12 lb | 2 to 3 days | Monday 23 November (Sunday 22 to be safe) |
| 12 to 16 lb | 3 to 4 days | Sunday 22 November |
| 16 to 20 lb | 4 to 5 days | Saturday 21 November |
| 20 to 24 lb | 5 to 6 days | Friday 20 November |
Put the bird on a tray on the bottom shelf so juices cannot drip onto other food. If you start late, thawing in cold water takes about 30 minutes per pound with the water changed every 30 minutes, and the turkey must be cooked straight after. A fresh turkey should be bought only 1 to 2 days before cooking. Work out exact times for your own bird with the free turkey timing calculator, and check the size with the turkey size calculator.
The countdown
| When | What to do |
|---|---|
| Thursday 19 November (a week before) | Fix the guest count and the menu. Ask guests about allergies and diets. Check you own enough oven dishes, a roasting pan, a meat thermometer and a big enough cooler or fridge space. Buy the turkey if it is frozen. |
| Saturday 21 to Sunday 22 November | Move the frozen turkey to the fridge (see the table above). Shop for everything non-perishable and for the pie ingredients. |
| Monday 23 November | Clear fridge space for the dishes you will make ahead. Make cranberry sauce, which keeps for days and is served cold. Order or collect fresh items if you need them. |
| Tuesday 24 November | Buy the fresh vegetables, herbs and dairy. Cut the bread for stuffing and leave it to dry. Make pie crusts, or bake the pies if you want them out of the way. |
| Wednesday 25 November (the day before) | Bake the pies. Assemble casseroles, covered, in the fridge. Prepare the stock-based gravy base. Chop vegetables for the morning. Set the table. Check the turkey is fully thawed: if it is not, cold water finishes it quickly. |
| Thursday 26 November, morning | Take the turkey out of its packaging, remove the giblets, pat it dry and put it in the oven so that it finishes at least 30 minutes before you eat (it needs that long to rest). Unstuffed roasting at 325 °F (165 °C) takes roughly 3 to 4½ hours for 12 to 20 lb. |
| While the turkey rests | The oven is free for the casseroles, stuffing and rolls, which is why the rest time matters. Reheat gravy and mashed potatoes on the burners. Carve and serve. |
Safety points worth keeping
- A turkey is done when a food thermometer reads 165 °F (74 °C) in the thickest part of the breast, the innermost part of the thigh and the wing. Colour and pop-up timers are not reliable.
- Cook stuffing in a separate dish, not inside the bird, as the USDA advises.
- Do not leave cooked food out for more than 2 hours. Refrigerate leftovers within that time and eat them within 3 to 4 days, reheated to 165 °F.
The hard part is the oven on the day
The list above gets the shopping and prep right. What trips most hosts is that the stuffing, casseroles and rolls all want the same oven at different temperatures, and only have a gap while the turkey rests. For ideas on moving jobs to the day before, see the make-ahead guide, and for how a whole menu fits through one oven see fitting Thanksgiving dinner in one oven.
Times here are typical. Your oven, your pans and your recipes decide, and a thermometer decides when the turkey is done.
